Making fruit preserves is a rewarding way to enjoy seasonal fruits all year round. The boiling water canning method is a popular technique that ensures your preserves are safely stored and retain their flavor and texture. This guide will walk you through the steps to make your own fruit preserves using this simple method.
Gather Your Supplies
- Fresh fruit of your choice (berries, peaches, apples, etc.)
- Sugar
- Lemon juice (optional, for acidity)
- Ball or Mason jars with lids and bands
- Large pot for boiling water
- Jar lifter and canning funnel
- Kitchen towel or cloth
Prepare the Fruit and Jars
Start by washing and preparing your fruit. Peel, pit, or chop as needed. In a large pot, combine the fruit with sugar and lemon juice if using. Cook over medium heat until the mixture reaches a boil and the fruit is soft. Meanwhile, sterilize your jars by boiling them in water for 10 minutes. Keep the jars hot until ready to fill.
Fill the Jars and Seal
Using a canning funnel, fill the hot jars with the hot fruit preserves, leaving about ΒΌ inch headspace at the top. Wipe the rims of the jars with a clean, damp cloth to remove any residue. Place the lids on the jars and screw on the bands until just fingertip tight.
Process in Boiling Water Bath
Place the filled jars into a boiling water bath canner, ensuring they are covered by at least 1 inch of water. Bring the water to a rolling boil and process the jars for 10-15 minutes, adjusting for altitude if necessary. Once done, carefully remove the jars with a jar lifter and place them on a towel to cool.
Check the Seals and Store
After cooling, check that each jar has sealed properly β the lid should not flex up and down. If any jars did not seal, refrigerate and use the preserves promptly. Properly sealed jars can be stored in a cool, dark place for up to a year. Enjoy your homemade fruit preserves throughout the year!
